Foodie Fridays: Sweet & Sour

 A light and easy meal to make for dinner, lunch or even a light app!

The RECIPE

CHILLED SWEET AND SOUR CUCUMBER NOODLES

yield: 4 SERVINGS

prep time: 2 HOURS (INCLUDES CHILLING)

INGREDIENTS:

2 medium cucumbers, peeled

1/2 cup diced red onion

3/4 cup rice vinegar

2 1/2 teaspoons sugar

1/2 teaspoon crushed red pepper flakes (optional)

1 1/2 teaspoons white sesame seeds

Equipment: a mandoline or spiralizer

DIRECTIONS:

Attach the julienne blade to the mandoline and adjust it to the 1/8-inch-thick setting. Applying medium pressure, carefully run one of the cucumbers down the blade to form noodles, slicing until you reach the core. Rotate the cucumber a quarter turn and continue slicing and rotating until you've cut the entire cucumber. Repeat the slicing process with the second cucumber then transfer the cucumber noodles to a medium bowl.

Add the red onion, rice vinegar, 1/4 cup water, sugar and crushed red pepper flakes (optional) to the bowl. Cover the bowl with plastic wrap and refrigerate the cucumber noodles for a minimum of 2 hours, stirring occasionally, until chilled.

While the noodles are chilling, toast the sesame seeds in a small saucepan over low heat until golden brown.

When ready to serve, use tongs or a slotted spoon to transfer the noodles to serving plates and top with the toasted sesame seeds.

Kelly's Notes:
If you're using a spiralizer instead of a mandoline, simply twist the cucumber into the spiralizer to form noodles.

Weddings On The Beach:

Ever attend a beach wedding and as you're getting ready think... hmmm what shoes do I wear? Heels will sink, wedges are clunky and usually not dressy enough and sandals just seem too casual bejewelled or not!

Well... while planning your OWN beach wedding - think ahead for your guests and make it easier on them. We have two ways you can do that effortlessly...

At The Ceremony:

Lighten up the load for guests by organizing a shoe shelf at the entry way to the beach. With a "shoe check" there assisting guests and suggesting they remove their shoes, everyone will be more comfortable!

It never fails. Once dinner is over and the drinks are consumed, somewhere between cocktails and dessert, the ladies start to complain about their feet aching and just begin begging to kick their heels off. Some are smart enough to bring their own set of back up sandals in their clutch (should it be big enough) while others will feel obliged to keep their heels on, determined not to destroy their ensemble. 

What to do?

Leave a basket by the dance floor suggesting that ladies kick back, relax and have a good time in a pair of flip flops! Look to the dollar store, and party magazines for a bulk buy and tie each pair with a size tag included so guests can grab their size without digging!

The Hollywood Bra Debate

It's come to our attention lately that a new unforeseen trend has emerged out of Hollywood.... Celebrities have some how decided that bras are just unnecessary "accessories" that should be avoided all together. We've seen it on the red carpet with Anne Hathaway...

But now this horrific sight has translated into an everyday "a-okay" thing to do. We, on the other hand, do not agree. Note, Miley Cyrus (Disney star is all we can think when we hear her name) has taken on this "bye-bye-bra" trend, among others from the young Hollywood set, such as Rihanna and Victoria Secret model and fiancé to Adam Levine, Behati Prinsloo. Honestly, Prinsloo has no excuse, yes the woman may have a stunning body, but imagine the amount of bras she must be hoarding as an Angel? 

Miley Cyrus - Just don't.

How could we forget this one? Rihanna

Woman, you've got more bras than a department store... put one on!

Ladies, it's ok to want to let the girls roam free if you will, but, if you're planning to do so atleast throw on a pair of Nippies and tame the darts. Meanwhile we're big believers in diminishing VPL and VBL, nipping is also frowned upon. The Nüdwear Nippies allow you to have the comfort of being braless meanwhile hiding the evidence!
